The aims of this highly practical course are to provide fundamental practical winery skills and understanding to those working, or who wish to work, in a winery. 

During the course, a small group of students (max 6) will learn to complete key practical winery operations effectively, efficiently and safely. This will enable them to become effective winery operatives, and provide the foundation for future skills and knowledge development in winemaking.

Skill development includes: 

- Grape processing

- Winery transfers

- Fermentation monitoring and management

- Winery additions and processing aids

- Oak in winemaking

- Filtration

- Packaging operations

- Food safety and OH & S in the winery 

Students will be continuously assessed, through observation, questioning and short multiple-choice tests, throughout the week. The results of this assessment will recorded on a certificate of competence, listing the operations that they have mastered during their programme.

This course does not cover statutory requirements, such as first aid, forklift training or similar
