This highly practical course is designed to enable wine producers to
establish an effective wine analysis laboratory in their winery.
After a brief overview of basic Chemistry, students will be taught how
to carry out the major wine analyses safely and accurately. These will
include the measurement of acidity (pH & titration), sugars
refractometry, hydrometry and Rebelein), sulphur dioxide (free and
total), alcohol (ebulliometry and distillation), volatile acidity (steam
distillation) and malo-lactic fermentation monitoring (thin layer
chromatography).
These analyses should enable producers to monitor the development
of their wines and self-certify them for the UK Regional Wine
Scheme.
Students will require GCSE grade C Maths and Chemistry (or
equivalent) to benefit from this course.
