G) Principles of Winemaking

This course focuses on the production of wine from grapes, although many of the techniques discussed can also be applied to other types of wine. Topics discussed include: harvesting the vintage, processing the grapes, controlling the alcoholic fermentation, red wine production, wine clarification, bottling and wine evaluation. Half of each session is spent doing hands-on practical work in the winery. The course ends with a short multiple choice test and follows on from the Principles of Vinegrowing course, but can also be studied
independently or concurrently.
