This course focuses on the production of wine from grapes, although
many of the techniques discussed can also be applied to other types
of wine. Topics discussed include: harvesting the vintage, processing
the grapes, controlling the alcoholic fermentation, red wine
production, wine clarification, bottling and wine evaluation. Half of
each session is spent doing hands-on practical work in the winery.
The course ends with a short multiple choice test and follows on
from the Principles of Vinegrowing course, but can also be studied
independently or concurrently.
